Blue is the color for Friday in Thailand and the theme of this dish is blue. I love pesto sauce and regularly make it at home. I put it on grilled chicken breast, toast, and of course, pasta! But for Jaycob I’ll be adding pesto to a milk-based creamy pasta. You can see my simple pesto recipe which I’ll be uploading soon.
2oz extra light olive oil
20oz of pasta
2 cups fresh milk
3oz pesto sauce
6oz parmesan cheese
8oz portobello mushrooms finely diced
salt and pepper
In the pot, add 2oz of extra light olive oil and cook half of the bacon until crispy.
Remove the bacon, and with the same oil, saute the other half of your bacon and portobello mushrooms
Add your pasta, stir, close the lid and let it cook over medium heat for about 8-10 minutes, until the pasta is just about done.
Add 2 cups of milk and your pasta into the pot, lightly season with salt and pepper, close the lid and cook for about 10 minutes.
When the pasta is ready, turn the heat off and add 3 oz of pesto sauce and parmesan.
Softly stir and top with crispy bacon
1 – Cook half your bacon to a crisp – I like both soft bacon and crispy bacon. Crispy bacon adds a nice contrast to the dish as well. With some olive oil, cook this first half of bacon to a crisp.
2 – Saute mushrooms and bacon – Remove the crispy bacon and leave the oil. Here we saute the other half of bacon and portobello mushrooms for a few minutes. Lightly season with salt and pepper. I’m using low-sodium salt. Don’t add too much salt as there is sodium from the bacon and pesto sauce.
3 – Add your pasta – close the lid and let it cook over medium heat for about 8-10 minutes or until the pasta is just about done. I’m using pappardelle pasta in this dish, you can use any pasta you’re in the mood for.
4 – Add pesto sauce and parmesan – When the pasta is done, or nearly done. By now the most of the sauce should have evaporated. If not, leave it to cook with the lid off for a few more minutes. Turn the heat off and add your pesto sauce parmesan, and give it a soft stir.
5 – Top with crispy bacon – Move the pasta onto your serving dish and top with crispy bacon.
